Ingredients

  • 1½ cups cooked quinoa
  • 2 Persian cucumbers
  • 10 oz salmon (season/marinate with coconut aminos and sesame seeds)
  • ¼ cup mango, sliced or cubed
  • ¼ cup pickled onions
  • ½ cup edamame
  • ½ avocado
  • 1 tsp black and white sesame seeds
  • Crumbled nori (~3 tbsp)
  • Dressing: ¼ cup Greek yogurt, 2 tbsp sriracha, ½ tsp (or drizzle) honey, 1 tbsp (or dash) coconut aminos, ½ tbsp miso paste

Method

  1. Simmer the quinoa on the stove according to package instructions.

  2. Bake the salmon at 400°F for ~15–20 minutes (or cube and air-fry).

  3. Assemble the bowl and top with crumbled nori, sesame seeds, and dressing.

  4. Serve cold apart from the salmon and quinoa — nothing else needs cooking.
